It is provided with the largest amount of hops and it has the least amount of sugar among the three. The fourth kind of Chimay beer is the Chimay Doree, which is a kind of patersbier. Patersbier literally means "father's beer" and is therefore reserved for consumption by the priests or monks. Its alcohol content is only 4.8 percent abv and although it is similar to Chimay Red, it has a slightly different taste and it has a paler color.



The Chimay brewery does not sell the Doree commercially so that the few bottles that find their way to the stores are not officially sourced. The water used for Chimay beer still comes from a well that is situated inside the abbey and the waste products are used as feed for the cows that are the sources of the milk utilized to produce the famous Chimay cheeses.



It should be noted that Chimay beer is one of the seven brands of Trappist beer that is authorized by the International Trappist Association. There are five other breweries in Belgium and one brewery located in the Netherlands that are sanctioned by this organization. Therefore, genuine Chimay beer bears the logo of this organization and that guarantees its quality and authenticity as Trappist beer.
